Greek Orzo Salad
Half pack of orzo pasta
Red onion
Cherry tomatoes
1 Lemon
½ cup parsley
Kalmato olives
Seedless cucumber
¼ cup olive oil
Greek feta cheese
Salt pepper t.t.
1 Tablespoon Pluck tree pepper
Boil half pack of orzo then strain and rinse with cold water put in bowl. Use juice of one whole lemon add olive oil and tosses. Chop cucumber in med dice and add to bowl with klamato olives, cherry tomatoes, chopped parsley, salt, pepper, feta cheese, pluck tree peppa and chopped red onion toss and refrigerate for 1 hour then serve.
Puerto Rican Hot Hash browns
3 Plantains
1 Tablespoon cilantro
2 ½ oz of diced onion
1 Teaspoon garlic powder
½ teaspoon ground black pepper
1 teaspoon sea salt
2 tablespoons pluck tree pepper
1 Egg
Grate three plantains in to medium mixing bowl. Heat olive oil in medium frying pan and heat to 350 - 375 mix in rest of ingredients into the grated plantains. Form pancake like shape and fry in ½ inch olive oil until brown and crisp.
Gaucho

2 pounds Skirt or any steak
1 ½ Tablespoon extra virgin olive oil
1 ½ Teaspoon white pepper
½ Teaspoon chili powder
1 ½ Teaspoon chipotle seasoning
1 Teaspoon salt
10 oz tomatoes
3 oz onions
2 cloves of garlic
¼ cup cilantro leaves
¼ cup red wine
1 ½ oz pluck tree peppa
1 or 2 bags of pita bread
1 bag of feta chasse
1 bag arugala
Marinate slices of steak in chili powder, olive oil, white pepper, chipotle seasoning. Then put marinated steak on skewers and grills. Take salt, diced tomatoes, diced onions garlic, cilantro, red wine, pluck tree peppa in a food processor and blend. Cut pita bread in halves fill with steak,
arugala, feta , and top with salsa.
Spicy tuna steak and curry sauce
4 tuna steaks
Salt tt
Pepper tt
4 sprigs fresh thyme 1 teaspoon dried
1 clove garlic
2 Tablespoon soy sauce
1 Tablespoon lime juice
1 Teaspoon powdered ginger
2 Tablespoon olive oil
2 white onions
1 stick butter
½ Teaspoon curry powder
1 Tablespoon fish stock
½ Teaspoon black pepper
1 ½ Tablespoon pluck tree peppa
3 cups of brown rice
2 cups heavy cream
In a mixing bowl, blend the salt, pepper, ginger, garlic, thyme, soy sauce, pluck tree
peppa, limejuice and olive oil. Brush the mixture all over tuna steaks. Cover and let sit ½ to 1 hour until ready to broil. Cover rice ½-inch water bring to a boil then turn down to a simmer and cover for 30 to 45 minutes.
Preheat a medium saucepan to medium-high, then melt butter and sauté onions for 10 minutes or until translucent. Allow to cool for at least 5 minutes then puree in a blender. Pour blended mixture back into the saucepan and add curry, fish stock, black pepper, heavy cream and a pinch of salt. Cook at medium heat for 5 minutes, reduce heat to low and keep warm. Take curry sauce on a plate top with a bed of rice then top that with the grilled tuna steak and serve.
Pluck tree peppa oyster stew
2 green onions, chopped, plus extra for garnish
2 Tablespoons butter
12 oz fresh raw oysters, untrained
1 ½ Tablespoon pluck tree peppa
1 quart half and half
Salt tt
Pepper tt
1/8 paprika
Sauté onion in butter until tender. Add remaining ingredients. Cook over low heat until oyster’s edges curl and stew is hot not boiling. Serve and add green onion on top of soup.
Kick’n crab cakes
1 lb lump crabmeat
1/3 cups panko bread crumbs
3 green onions finely chopped
2 Tablespoons pluck tree peppa
¼ cup mayonnaise
1 egg
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
½ lemon, juiced
1 clove garlic minced
1 teaspoon sea salt
Dash paprika
Flour, for dusting
½ cup oil
1 tablespoon old bay
In a large bowl, mix together all the ingredients, except for the flour and oil. Shape into patties and dust with the flour.
Heat oil in large skillet over medium heat. When oil is hot, carefully place crab cakes, in batches, in pan and fry until browned, about 4 to 5 minutes. Carefully flip crab cakes and fry until golden brown, about 4 minutes.
